Citrus Olive Oil Cake

Ingredients

  • 200 g flour
  • 150 g sugar
  • 1 teaspoon baking powder
  • 3 eggs
  • 125 ml Bella Oliva olive oil
  • 100 ml orange juice
  • Zest of 1 lemon
  • Pinch of salt

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a loaf pan.
  2. In a bowl, mix the flour, baking powder, and salt.
  3. In a separate bowl, whisk the eggs and sugar until light and fluffy. Gradually add the olive oil and orange juice, followed by the lemon zest.
  4. Gently fold the dry ingredients into the wet mixture until smooth.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a skewer inserted into the center comes out clean.
  6. Allow the cake to cool before serving.
